Kersia, through its Canadian branch 🇨🇦, is proud to partner with the MAPAQ Research Chair on Meat #Quality and Safety (MuscULo). The MuscULo Chair’s mission perfectly aligns with Kersia’s vision: Inventing a food safe world. 
 
Through a #sustainable and integrated approach from farm to table, the Chair develops innovative strategies for the meat sector🥩at all stages of the food chain.
 
It aims to improve the quality and safety of meat products to reduce food loss and waste.
 
Kersia is therefore very pleased, as a world leader in #biosecurity and #foodsafety, to join forces with the multidisciplinary team of the Musculo Chair and its industrial collaborators Olymel the Center de développement du porc du Québec inc (CDPQ) 😊
 
Our savoir-faire in research and development in #hygiene and food safety is used thanks to Dr. @Éric Émond, International Biotechnology Director and Biotechnology Technician @Anne-Marie Paquin. Their objectives are to develop and validate hygiene concepts and propose innovative solutions that will respond to the entire agri-food sector of meat products from Farm to Fork.

Improve the quality of meat products to reduce food waste and maintain the sector’s competitiveness (in this respect, the vast majority of work will take place in industry and in partnership with industry).

 

Characterize the contamination kinetics of pigs, their carcasses and processed products to control it better and identify microbiological risks.

 

Identify and positively modify the gastrointestinal microbiota.

 

Understand and control structural muscle defects in broiler breast.

 

Develop a new generation of health interventions for all links in the agri-food chain from farm to table.
