Through a¬†#sustainable¬†and integrated approach from farm to table, the Chair develops innovative strategies for the meat sectorūü•©at all stages of the food chain.
 
It aims to improve the quality and safety of meat products to reduce food loss and waste.
 
Kersia is therefore very pleased, as a world leader in¬†#biosecurity¬†and¬†#foodsafety, to join forces with the multidisciplinary team of the Musculo Chair and its industrial collaborators Olymel the Center de d√©veloppement du porc du Qu√©bec inc (CDPQ)¬†ūüėä
 
Our savoir-faire in research and development in¬†#hygiene and¬†food¬†safety is used thanks to Dr. @√Čric √Čmond, International Biotechnology Director and Biotechnology Technician @Anne-Marie Paquin. Their objectives are to develop and validate hygiene concepts and propose innovative solutions that will respond to the entire agri-food sector of meat products from Farm to Fork.

Improve the quality of meat products to reduce food waste and maintain the sector’s competitiveness (in this respect, the vast majority of work will take place in industry and in partnership with industry).

 

Characterize the contamination kinetics of pigs, their carcasses and processed products to control it better and identify microbiological risks.

 

Identify and positively modify the gastrointestinal microbiota.

 

Understand and control structural muscle defects in broiler breast.

 

Develop a new generation of health interventions for all links in the agri-food chain from farm to table.
